Ingredients

*Ingredient amounts below make 2 large bagels*

Homemade Bagel
  • 1 cup + 2 tbsp self-rising flour - you can make self-rising flour yourself by adding 1 tsp salt and 1 tbsp baking powder to all purpose flour
  • 1/2 cup plain yogurt - can use Greek yogurt, or for vegan option use thick coconut yogurt
  • 1/4 cup Maple Bacon electrolyte coffee
  • 1/4 cup maple syrup
  • Topping: 2 tbsp coconut sugar (or any granulated sugar of your choosing) + 1 tsp cinnamon for cinnamon sugar topping
Sandwich Filling
  • 2 eggs cooked to your liking
  • Bacon
  • Cream cheese
Vegan Sandwich Option
  • Substitute eggs for 1/4 slice from a block of firm tofu - pan fry until lightly brown and crispy
  • Substitute cream cheese for vegan cream cheese (we used Miyokos)
  • Substitute bacon for tempeh bacon (we used Lightlife brand)

 

Homemade Bagel Instructions

  1. Preheat oven to 350°F
  2. In a bowl, mix together self rising flour and yogurt
  3. Add in coffee and maple syrup and mix until you have a thick dough that is easy to shape and does not stick to your hands. If dough is too sticky, add 1 tbsp flour at a time until appropriate texture is achieved.
  4. Separate dough into 2 equal balls. On a floured surface, roll each ball into a log and then shape each log into a circle, pinching the ends together.

  5. Place the bagels onto a lightly greased baking sheet and if adding cinnamon sugar topping, lightly brush the top of each bagel with either oil of your choice or butter and sprinkle on cinnamon sugar mixture.

  6. Bake for approximately 20 minutes or until each bagel is golden brown.

  7. Let cool completely

  1. Fry 2 eggs and bacon to your liking in a skillet (or tofu and tempeh bacon for vegan option)
  2. Slice bagels in half with a bread knife

  4. Add eggs, bacon, and any other sandwich toppings to your liking
  5. Enjoy!
