No Bake PB&J Protein Cheesecake Recipe

No Bake PB&J Protein Cheesecake Ingredients 

Base Layer Ingredients

Cheesecake Layer Ingredients

  • 1 1/2 cups cashews
  • 1 tbsp lemon juice
  • 1/2 cup maple syrup
  • 1/3 cup almond milk (or milk of your choosing)
  • 1 tbsp melted coconut oil
  • 1 tbsp vanilla

PB&J Swirl Ingredients

  • 2 tbsp runny peanut butter
  • 2 tbsp jam of your choosing



  1. Soak cashews in boiling water for at least 30 mins, or in room temp water for 4-6 hours.
  2. Mix together all base layer ingredients in a bowl until you have a thick dough.
  3. Press the dough into a parchment paper lined 8x8 pan.
  4. Add all cheesecake layer ingredients to a food processor and blend until smooth.
  5. Pour the blended cheesecake layer onto the base layer in the pan.
  6. For the PB&J swirl, take 2 tbsp of peanut butter (must be runny consistency, or mix with 1-2 tbsp of warm water to thin it out) and spoon it onto the top of your cheesecake layer.
  7. Add your 2 tbsp of jam to the cheesecake (you may also want to thin this out with 1-2 tbsp of warm water depending on the starting consistency).
  8. Using a toothpick or knife, swirl the peanut butter and jelly.
  9. Place in the freezer for at least an hour and enjoy.
  10. Storage: Store this covered tightly in the freezer. When ready to eat, remove from the freezer and let sit on the countertop to thaw for a few minutes before eating.
