PB&J Coffee Muffin Ingredients and Instructions
Ingredients
The following ingredient quantities will make 12 large muffins.
- 3 medium sized bananas
- 1.5 cups oat flour
- 1tsp vanilla
- 1tsp baking powder
- 1/2 cup peanut butter
- 1/4 cup PB&J flavored electrolyte-infused coffee (can substitute with our banana flavored electrolyte coffee or your Long Run Coffee flavor of choice
- Jam of your choosing (we used raspberry)
Instructions
- Preheat oven to 350°
- In a bowl, mash your bananas into a chunky pureed consistency.
- Add all ingredients except your jam to the bowl and mix until well combined.
- Lightly oil a muffin tin and add approximately 1.5 tbsp of muffin batter to each well of the muffin tin.
- Add a spoonful of jam to the top of each muffin.
- Top each muffin with the remainder of the muffin batter.
- Bake for approximately 15 minutes or until muffins are lightly browned and toothpick comes out clean.
- Let cool completely and enjoy!
- Storage: Muffins may be stored in a sealed container in the fridge for up to a week
