Electrolyte Infused Protein Donut Recipe for Runners

We're going to cut to the chase. 

Runners love donuts. Runners love coffee. Runners love electrolytes. 

So here it is. 

The Electrolyte Infused Protein Donut Recipe for long runs, by Long Run.

 

Ingredients:

  • 1 cup oat flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup electrolyte-infused dark roast coffee (cooled)
  • 1/4 cup almond milk (or milk of choice)
  • 2 tablespoons coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup or honey
  • 1 large egg

 

Instructions:

  1. Preheat the Oven

    • Preheat your oven to 350°F (175°C). Lightly grease a donut pan or spray it with non-stick cooking spray.
  2. Mix Dry Ingredients

    • In a large mixing bowl, combine the oat flour, vanilla protein powder, almond flour, baking powder, baking soda, and salt. Mix well to ensure even distribution of all dry ingredients.
  3. Combine Wet Ingredients

    • In a separate bowl, whisk together the applesauce, electrolyte-infused dark roast coffee, almond milk, melted coconut oil, vanilla extract, maple syrup or honey, and the egg until well combined.
  4. Combine Wet and Dry Ingredients

    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix, as this can make the donuts dense.
  5. Fill the Donut Pan

    • Spoon the batter into the prepared donut pan, filling each mold about 3/4 full. Smooth the tops if necessary.
  6. Bake

    • Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center of a donut comes out clean.
  7. Cool and Enjoy

    • Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy your protein-packed donuts with a boost from your electrolyte-infused coffee!
  8. Glaze
    • Add any glaze or toppings of your choice, such as a simple coffee glaze or a sprinkle of protein powder for extra flavor and nutrition.
