Gooey PB&J Coffee Blondies Ingredients
Peanut Butter Shortbread Base:
- 2 cups almond flour
- 1/2 cup vanilla protein powder of your choosing (or additional almond flour) - we used this Orgain Vanilla Plant-Based Protein
- 1 tbsp vanilla extract
- 1/4 cup peanut butter
- 1/4 cup Pre Run PB&J electrolyte infused coffee or other Long Run Coffee electrolyte infused coffee of your choice
- 1/3 cup maple syrup
- 2 tbsp jam of your choosing (we used strawberry)
Peanut Butter Drizzle Topping:
- 2 tbsp peanut butter
- 1 tbsp coconut oil
- Preheat oven to 325° F and line an 8x8 baking pan with lightly greased parchment paper
- In a bowl, mix together all ingredients for the peanut butter shortbread base until you have a thick slightly moist dough that sticks together well
- Press half of the dough into your baking pan
- Spread the jam of your choice on top of the dough in the baking pan and top with the other half of the dough
- Bake for approximately 20 minutes or until the bars are lightly browned
- Let cool completely
- Peanut butter drizzle icing: mix together 2 tbsp peanut butter and 1 tbsp of coconut oil and heat in microwave for 30 seconds or until coconut oil is fully melted and the mixture is runny. If you want a thinner icing, you can add 1 tbsp of water at a time until you achieve your desired consistency.
- Drizzle or spread over peanut butter shortbread.
- Slice into individual blondie bars and enjoy!
- Storage: Bars can be kept covered in the fridge for up to 1 week.
